This recipe is too easy - and turns out perfect every time.  As written, this recipe will serve approximately 4 adults.

Place 2 cups brown rice in a large roasting pan.  Add 4 large carrots.  If desired, add a large onion, cut into wedges, and some fresh garlic cloves.  Wash one chicken (whole or cut up) or 4 leg quarters and place on top of rice and veggies.
Pour 5 cups water or broth over the contents of the pan, and sprinkle with poultry seasoning and a little salt (or whatever spices you enjoy).  Put lid on roasting pan (or cover tightly with foil) and bake at 350 degrees Fahrenheit for about an hour, until chicken and rice are done (cut chicken will cook more quickly than a whole chicken).

You can experiment with temperature/cooking time on this one - I usually cook at a lower temp for a longer time when I make this recipe; in my opinion, it results in a more tender chicken.  Try different veggies or meats, too!  Turnips and winter quash are yummy additions, and we have used pork instead of chicken...raid your refrigerator and pantry, and be creative!
