This recipe has been in our family for generations now. It is one of my favorites – mainly because of how forgiving it is. I’ve left out ingredients, substituted ingredients, added extra ingredients, overcooked and undercooked this recipe – and it still turns out good every time. Feel free to “funk” it up!!
2 or 3 very ripe bananas, mashed
1/3 cup butter, softened
2/3 cup sugar
2 eggs
1 3/4 cup flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1 cup nuts, chopped (optional)
Grease a loaf pan and set aside. Preheat oven if necessary. Mix ingredients in the order listed, then bake at 350 degrees Fahrenheit for about an hour, or until a toothpick inserted in center comes out clean. This Banana Bread is delicious beyond words slathered with butter right out of the oven, and makes a great snack when topped with almond butter and raisins!
Some variations I’ve tried:
Substitute extra virgin coconut oil for the butter, or part applesauce/part oil
Reduce sugar by 50%, add raisins & cinnamon
Substitute 1/2 cup honey for sugar
Use wholegrain flour, add oats
Add extra banana
