This is a favorite at our house. We use whatever seasonal produce is available at the time to mix it up a bit. As written, this recipe will feed four very hungry adults.
Start with a 1 lb. package of Angel Hair pasta. In a large pot, bring water to boil, and prepare pasta following directions on package. Meanwhile, continue with the following:
Large onion, diced
1 lb. ground turkey
3 oz. pepperoni, chopped very finely (optional)
3 large cloves garlic, minced
1 tablespoon ground sage
Salt and pepper, to taste
Heat a small amount of oil in a large pan over medium heat. Add onion, meat, garlic, and spices; cook until just brown. Then add any combination of the following, chopped and equaling about 4 cups total:
Yellow squash
Zucchini
Broccoli
Eggplant
Kale or beet greens
Mushrooms
Parsley
Any other vegetable/herb you desire
Add about 1/4 cup water to steam veggies. By this time, the pasta should be done cooking. Drain pasta, pour into a large bowl and mix in a little olive oil to prevent sticking; set aside. When the veggies are nearly cooked, mix two tablespoons Pesto into the contents of the pan, stirring until well combined and fully cooked. Pour contents of pan onto noodles. Top with grated parmesan or romano cheese, chopped fresh tomatoes, and fresh basil, if desired. Mmmmm!
